Our Classic French cooking classes are relaxed, fun and informative. We have a hands-on approach and focus on using seasonal produce and classic recipes, yet with a modern twist! You will learn to adapt each dish to suit the produce available and share tips on traditional techniques such as curing and preserving. Basic knife skills will also be covered. You may be a skilled cook who wants to be completely “hands-on” or someone who just likes to sit back, watch and learn.

Our classes are in English and commence at 10:00 am. You'll finish around 3:30 pm after enjoying the lunch you've prepared sitting on the banks of the Canal du Midi.

The classes and lunch are an ideal activity for visitors to Carcassonne, cyclists & walkers and those cruising the Canal du Midi. We can arrange a pick up from Carcassonne hotels. Companions may enjoy the cycling and walking tracks along the Canal or to the nearby wineries; the fishing and birdlife or just relax in our Canal side gardens and then join you for lunch.


Our recipes are adapted to suit the season and today’s busy lifestyle - it’s all about preparation in advance!

SEASONAL STARTERS - perhaps using the asparagus, artichokes, heirloom tomatoes or melons freshly picked from the fields around us.

MAIN COURSES - prepare and trim locally sourced duck, Guinea Fowl, French cuts of meat or fish and shellfish sourced from the Mediterranean.

CLASSIC SAUCES - perfect classic French sauces and accompaniments for each course adapting them to bring out the seasonal flavours.

TIMELESS DESSERTS - classic French desserts such as clafoutis, choux or macarons are given a modern twist with simple yet stylish presentation.

THEN ENJOY - relax in the peace of our canal side gardens and enjoy the meal that you have prepared accompanied by expertly paired local wine.
